Recipe of the Week: Bridget Jones's Turkey Curry Buffet!

Since I bought a bigger turkey this year (15.80 lbs), our leftovers are plentiful.

I got a household request for some turkey curry and it always reminds me of Bridget Jones's parents Turkey Curry Buffet. Hilarious! Have you seen the movie? What's with the Brit's and their curry?

This recipe is a hand-me-down from my step-mom, Rosemary (thank you) and it is easy and fabulous!


Turkey Curry


2 Tablespoons butter
1 1/2 cup chopped apple
1/2 cup chopped onion
1 glove garlic, minced
2 Tablespoons flour
3-3 teaspoons curry powder
salt and pepper
2 cups milk
2 cups cubed cooked turkey
4 cups cooked jasmine rice
Optional: flaked coconut, raisins, green onion, chopped peanuts/blanched almonds or chutney


Melt butter in large saucepan and add apple, onion and garlic; cook 5 minutes over medium/low heat.

Stir in flour and curry powder; season with salt and pepper.

Slowly add milk and cook until sauce thickens; then add turkey and heat through.

Serve with rice and condiments
