We had a pretty quiet Memorial Day weekend. Brian spent a lot of time in the kitchen completely spoiling me with some amazing food, including Chicken Marsala right when I got off the train Friday night.
We grilled Saturday after spending time in the yard cleaning up beds and planting flowers.
Sunday was an afternoon BBQ at Lake Morton with friends.
Monday was an extra special treat, as my train was cancelled and I got to spend the entire day and night in Seattle. Brian and I walked 4 miles up to the Alki Lighthouse for their Memorial Day open house tours.

It's practically an urban legend by now, but having just come back from Maui I am reminded of the first trip we took and meeting up with my friend, Simon from Melbourne, Australia.
After 18 holes of pretty poor golf (on my part), we stopped off at Johnny's Burger Joint located right at the 18th hole on the Kaanapali Golf Course. It was a hot day and I managed to drink 6 coronas and drop about $20 in the jukebox.
Johnny's is permanately closed now and something else is there, but every time I pass by I remember that super fun day.

Welcome to Summer!
With Memorial Day weekend just around the corner, don't you want a super easy and tasty BBQ recipe that you don't even have to fire up your BBQ for? You betcha!
Here you go and enjoy your long weekend plans!
Coca-Cola BBQ Chicken Sandwich
4 lbs chicken breast, boneless and skinless
1 can (12 oz) coca-cola
1 bottle BBQ Sauce
4 cups pre-made cole slaw
12 hoagie or cibata rolls
12 slices Swiss cheese (optional)
Coat slow cooker with cooking spray and preheat to high.
Add chicken breasts and pour soda and BBQ sauce over chicken; stir to mix.
Cook on high for 3 hours, low for 6-7.
Before serving, pull or shred chicken with two forks into small pieces.
Serve on buns topped with cole slaw, cheese (if desired) and/or additional BBQ sauce, if needed.

Welcome back to me!
I've taken a bit of a break from regular blogging to give time to myself and to honor the wonderful 12 days that I was in Maui....my longest vacation in 20 years and my longest time in Maui ever.
It will also probably be our last trip to Maui for awhile and while that brings me great sadness...I know that there are other place in the U.S. and in the world that we would like to visit...so our time in Maui has come to a sort of end....for now.
Where has the rest of May gone? Next week it will be all talk of Summer and Memorial Day BBQs and fun in the sun (let's hope), but what has been keeping us busy since we got back from Maui?
Kentucky Derby Day at Emerald Downs! We had an amazing day and I won $336.20 on a $2 ($24) exacta box.
We also had a family reunion and Mother's Day festivities, plus going to see "An American in Paris" at the Keller Auditorium in Portland.
This past weekend was the Preakness, and although not as financially successful as the Derby, we still cashed some tickets and I wore a hat. Perfect!
I feel all caught up, now!
