Recipe of the Week: Slow Cooker Corn Pudding

Thanksgiving sides can always be a little tricky.  Do you go all out traditional or do you throw in one new dish for your family and friends to try?

If your Thanksgiving is a potluck this year, or if you run out of a side dish during the quest for the epic leftover meal, this is a quick and easy dish to throw together that goes with turkey and all the trimmings, plus you make it in your slow-cooker


Corn Pudding


Cooking Spray
1/4 cup butter, melted
1 egg
1 cup sour cream
1 package Betty Crocker cornbread mix
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) creamed style corn
1 cup shredded Colby-Monterrey Jack Cheese Blend


Spray your slow cooker with cooking spray.

In a large bowl, mix all ingredients together then pour into slow cooker.

Cover; cook on high heat for 2 1/2 to 3 hours or until mixture is set and knife inserted in the center comes out clean.

Let stand for 5 minutes before serving.
