Recipe of the Week: Slow Cooker Pumpkin Cobbler


Thanksgiving is three weeks away and this year I am posting Thanksgiving (or Christmas too) recipes that you can make in your slow cooker.  We all want Thanksgiving to go off without a hitch, right? Why not make something that is time saving and easy.

This sounds like the perfect Thanksgiving eve dessert or something a bit different for either Thanksgiving or Christmas.  It's a foolproof way to keep people out of the pumpkin pie!

Slow Cooker Pumpkin Cobbler


Ingredients:


3 eggs
20 oz. can pumpkin puree
12 oz evaporated milk
1 cup sugar
1/4 cup brown sugar
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 tsp vanilla
Butter Pecan Cake Mix
4 tbsp brown sugar
3/4 cup melted butter
chopped walnuts, optional (garnish)
vanilla ice cream, optional

Directions:


Beat the eggs slightly.  Add the puree, evaporated milk, sugar, cinnamon, ginger, salt and vanilla.

Pour the mixture into a greased slow cooker.  Top with the powdered cake mix and spinkle with brown sugar.

Drizzle melted butter evvenly over the top.

Cook on low for 3-4 hours.

Serve garnished with nuts and/or a scoop of vanilla ice cream.
