Mexico: Day One

Sunday was pool day!

We watched the sunrise, cooked scrambled eggs in our room and headed to the Sky Pool by 9:30.

After a few hours in the sun (and a few cold beers), we headed downstairs to a large conference room to watch the AFC and NFC championship games.

After the games were over, we caught a cab into downtown and had a wonderful dinner at Maro's Shrimp House....two amazing lobster tails and 8 jumbo butterflied shrimp, all for less than $20. It's one of our favorite places in Cabo to eat.


Oh....and you can't beat a couple of their famous "Bulldogs". Shug.....shug....shug.

Mexico: Our Arrival

Greetings from Cabo!

We arrived at Pueblo Bonito Sunset around 3:00 yesterday afternoon and were "welcomed home" by friendly familiar faces, basked in the glow of the Mexican sun.

We had just enough time to drop our luggage off in our room and race down to the lobby bar to watch our first sunset.
A few margaritas and some amazing tortilla soup and early to bed. Vacation is a lot of work!

Chick and I are probably just taking off about now.....down to Cabo San Lucas, Mexico for a little rest and relaxation.....our annual "girls trip".

I'll try and post next week (if and when I can) so as a result there will be no Recipe of the Week on the 27th or Old Photo Friday on the 28th.

I'll try and bring some sunshine back in my suitcase!

Old Photo Friday: Dance Hall Days

While I enjoyed dancing (singing too) as a young girl, I was not the performer that my mother was. All I remember about these classes was being scared to death of the performances that our group would put on a couple of times a year for friends and family.

I think I took dance classes at Wilamalane for quite a few years (my mother was an assistant instructor). I remember all the faces in this photo including Kristen and Lori (back row) who I went to elementary, middle and high school with.

Recipe of the Week: Oroweat Sandwich Thins Pizza


Have you tried these sandwich thins yet?

I can't say that I enjoy them for a sandwich (I think they are too thin and messy to eat with) but when I saw this commercial last night for sandwich thins pizza, I think I found a wonderful alternative (the possibilities are endless).

Mushroom and Spinach Mini Pizzas
Slightly adapted from Oroweat

Ingredients:
4 Oroweat 100% whole wheat sandwich thins, sliced in half
6 sun-dried tomatoes, packed in oil, minced (plus two tablespoons of the oil, divided)
8 oz. assorted mushrooms, thinly sliced
salt and pepper
1 cup ricotta cheese
1 cup fresh baby spinach leaves
1 cup, divided shredded mozzarella

Directions:
Preheat oven to 350°F. Toast Sandwich Thins halves to a light golden brown.

In a skillet, heat 1 tablespoon of the oil from the marinated sun-dried tomatoes over medium heat. Add mushrooms and cook until soft and moisture is released, about 5 to 7 minutes; season with salt and pepper to taste.

Meanwhile, add ricotta and minced sun-dried tomatoes with 1 tablespoon of their oil in food processor and mix until smooth (you could also do this by hand). Pulse to incorporate and season to taste with salt and pepper.

Spread approximately 2 tablespoons of the sun-dried tomato and ricotta mixture on top of each toasted Sandwich Thins half. Top each pizza with a few baby spinach leaves and divide mushrooms between each pizza. Top with 1/4 cup mozzarella cheese.

Place pizzas on a baking sheet and bake for 3 to 5 minutes to heat to infuse all the flavors and melt the cheese.

Recipe of the Week: Garlic Mashed Potatoes


I know.....garlic mashed potatoes, boring!

You are probably thinking to yourself that you've had garlic mashed potatoes dozens of times and you love them.....but, have you had these garlic mashed potatoes before?

People....please make them! After I ate them for Christmas dinner, I fantacized about them for days, then made a double batch and ate them for breakfast! Some people like to have something sweet after dinner....I was chowing down on seconds (okay...thirds) of these mashed spuds. No joke. You'll never eat any other garlic mashed potatoes again...swear!

Garlic Mashed Potatoes
Slightly Adapted from America's Test Kitchen 2009

Ingredients:
2 lbs russet potatoes, peeled, halved then cut into 1 inch pieces
1 stick butter, plus 1-2 tablespoons
10 garlic cloves, minced (if your cloves are large, use half or about 5-6)
1 teaspoon sugar
1 1/2 cups half and half
1/2 cup water
salt and pepper

Directions:
Place potatoes in a colander and rinse under cold water. Drain thoroughly. This is a very important step to eliminate excess starch, which produces gluey mashed potatoes.

Melt 4 tablespoons of butter in a large dutch oven over medium heat. Cook garlic and sugar, stirring often, until sticky and straw colored, 3 to 4 minutes. Add rinsed potatoes, 1 1/4 cups half-and-half, water and 1 teaspoon salt to pot and stir to combine. Bring to boil, then reduce heat to low and simmer, covered and stirring occasionally, until potatoes are tender and most of the liquid is absorbed, 25 to 30 minutes (the last 10 minutes, I cooked without the lid on to reduce liquid).

Remove from heat, add remaining butter to pot and mash with potato masher until smooth. If needed, fold in remaining half-and-half until liquid is absorbed and potatoes are creamy (some people like thicker mashed potatoes than others; we found we didn't need additional liquid).

Season with additional salt and pepper.
Eat...eat...eat!!

Sandra's Birthday in Eugene


We spend last weekend in Eugene for Sandra's 50th Birthday.....

Catching up with friends and family.


Our first stop was to Oregon Rehab to visit brother/uncle Steve who is recovering from his accident in October. He's doing really well and will be leaving the rehab facility this coming week.

Saturday evening we had an early "girls" dinner at Osteria Sfizio located in the Oakway Mall. The modern Italian menu uses seasonal incredients and the best regional meats and seafood Oregon has to offer, including housemade pastas.

We ate family style and our meal included:
chicken liver mousse, apple juniper marmellata & crostini - $8
crispy fried calamari & spicy tomato sauce - $10
roasted beet salad with gorgonzola, apples, hazelnuts & vinaigrette - $8
local salad mix with house vinaigrette - $6
rigitoni with fennel sausage, fresh chili, swiss chard, rosa sauce & pecorino - $12
squid ink linguini with dungeness crab, cream, prosecco & lemon - $23
ravioli della casa (mushroom & ricotta), brown butter, sage and grana padano - $21

A wonderful meal!

The party then moved over to the Broadway Wine Bar where a small group gathered to celebrate. We drank some yummy wine.....

Divine Cupcakes are Organic, hydrogenated oil FREE, and 100% Vegan.

We ate some wonderful mini cupcakes from Divine Cupcakes and enjoyed a fabulous evening with good friends. Happy 50th, Chick!

Recipe of the Week: Chimichurri Sauce


Chimichurri is a variant of a green sauce used as a marinade for grilled meat. It is originally from Argentina and Uruguay, but is also used in countries as far north as Nicaragua and Mexico.

There are various fanciful etymologies for the word. One story claims that it comes from 'Jimmy McCurry', an Irishman who is said to have first prepared the sauce. The sauce was popular and the recipe was passed on. However, 'Jimmy McCurry' was difficult for the native people to say. Some sources claim Jimmy's sauce's name was corrupted to 'chimichurri', while others say it was changed in his honor.

The Uruguain gourmet Miguel Brasco claims that the word chimichurri originated when Britains were taken prisoner after England tried to invade the Spanish colony of Uruguay. The prisoners asked for condiment for their food mixing English, Aboriginal and Spanish words. Che-mi-curry stands for "che mi salsa" (dame condimento) or "give me curry". Later "che-mi-curry" corrupted to chimichurri.

At any rate, I cooked a wonderful skirt steak a few weeks back and my version of chimichurri sauce. Chick raved about it for days.

Skirt Steak with Chimichurri Sauce

Ingredients:
2 garlic gloves, chopped
1/2 bunch parsley
1/2 bunch cilantro
1/2 red onion, diced
4-5 fresh basil leaves
1 teaspoon dried oregano
1 heaping tablespoon Dijon mustard
Salt
Pepper
1/4 to 1/2 olive oil

Skirt Steak (typically about 1-1 1/4 pounds)

Directions:
Prepare grill

In a food processor, add all ingredients (minus steak) and begin to pulse. Once the ingredients are well mixed, slowly begin to drizzle in the olive oil while pulsing.

Place two heaping tablespoons of chimichurri sauce directly on skirt steak and leave out at room temperature for 15 minutes, then grill to your preference.

To serve: Slice steak thinly against the grain and garnish with remaining sauce.

Hockey Night!


The week between Christmas and New Years, I headed back to Portland and Brian got together with friends for Hockey Night!.

It was Brian's first Seattle Thunderbirds hockey game. The Thunderbirds are a junior hockey team based in the south Seattle suburb of Kent. They are part of the U.S. Division of the Western Hockey League.

Unfortunately, Brian did not win the "bounce a ball into the sun roof and win a car" promotion, but they all had a good time (minus moi).

Happy New Year!

Happy New Year!

Just my sweets and I on a Friday night New Years Eve date at our favorite little West Seattle pub. Yummy...gooey cheesy Stout (beer) French Onion Soup...light enough to fend off food coma so we watched the ball drop in NY (9PM PST) and the Space Needle fireworks show on TV.


New Years Day greeted us with sunny skies and bone chilling temps! Perfect for a walk through Lincoln Park and down to the Puget Sound.


Two white geese, which for me symbolized love and peace for 2011.

I hope everyone had a wonderful Christmas holiday. I had a relaxing and quiet time in West Seattle.....10 days with Brian and Sammy was fabulous!

It's back to reality this week and back to work here in Portland. I think most of us suffer a bit from Christmas let-down so perhaps a great menu will ease our pain! Keep you chins up!

Did you know....

It wasn’t until the 19th century that Americans began to embrace Christmas. Americans re-invented Christmas, and changed it from a raucous carnival holiday into a family-centered day of peace and nostalgia.

But what about the 1800s peaked American interest in the holiday?

The early 19th century was a period of class conflict and turmoil. During this time, unemployment was high and gang rioting by the disenchanted classes often occurred during the Christmas season. In 1828, the New York city council instituted the city’s first police force in response to a Christmas riot. This catalyzed certain members of the upper classes to begin to change the way Christmas was celebrated in America.

In 1819, best-selling author Washington Irving wrote The Sketchbook of Geoffrey Crayon, a series of stories about the celebration of Christmas in an English manor house. The sketches feature a squire who invited the peasants into his home for the holiday. In contrast to the problems faced in American society, the two groups mingled effortlessly. In Irving’s mind, Christmas should be a peaceful, warm-hearted holiday bringing groups together across lines of wealth or social status.

Here are some other factoids....

1821:
William Gilley printed a poem about "Santeclaus" who was dressed in fur and drove a sleigh drawn by a single reindeer.


1822:
Dentist Clement Clarke Moore is believed by many to have written a poem "An Account of a Visit from Saint Nicolas," which became better known as "The Night before Christmas." Santa is portrayed as an elf with a miniature sleigh equipped with eight reindeer which are named in the poem as Blitzem, Comet, Cupid, Dancer, Dasher, Donder, Prancer, and Vixen. Others attribute the poem to a contemporary, Henry Livingston, Jr. Two have since been renamed Donner and Blitzen.

1841: J.W. Parkinson, a Philadelphia merchant, hired a man to dress up in a "Criscringle" outfit and climb the chimney of his store.

1863: Illustrator Thomas Nast created images of Santa for the Christmas editions of Harper's Magazine. These continued through the 1890's.

1860s: President Abraham Lincoln asked Nast to create a drawing of Santa with some Union soldiers. This image of Santa supporting the enemy had a demoralizing influence on the Confederate army -- an early example of psychological warfare.


1897: Francis P Church, Editor of the New York Sun, wrote an editorial in response to a letter from an eight year-old girl, Virginia O'Hanlon. She had written the paper asking whether there really was a Santa Claus. It has become known as the "Yes, Virginia, there is a Santa Claus" letter.

1920's: The image of Santa had been standardized to portray a bearded, over-weight, jolly man dressed in a red suit with white trim.

1931: Haddon Sundblom, illustrator for The Coca-Cola ™ company drew a series of Santa images in their Christmas advertisements until 1964. The company holds the trademark for the Coca-Cola Santa design. Christmas ads including Santa continue to the present day.

1939: Copywriter Robert L. May of the Montgomery Ward Company created a poem about Rudolph, the ninth reindeer. May had been "often taunted as a child for being shy, small and slight." He created an ostracized reindeer with a shiny red nose who became a hero one foggy Christmas eve. Santa was part-way through deliveries when the visibility started to degenerate. Santa added Rudolph to his team of reindeer to help illuminate the path. A copy of the poem was given free to Montgomery Ward customers.


1949: Johnny Marks wrote the song "Rudolph the Red-Nosed Reindeer." Rudolph was relocated to the North Pole where he was initially rejected by the other reindeer who wouldn't let him play in their reindeer games because of his strange looking nose. The song was recorded by Gene Autry and became his all-time best seller. Next to "White Christmas" it is the most popular song of all time.
