Recipe of The Week: Vegetable Quesadillas


Weekends appear to be my biggest challenge in the weight loss battle. Structure is key with any diet and sometimes my weekend structure is a bit....well....unstructured.

Last week while thumping through a Weight Watchers cookbook, I came across a recipe for Vegetable Quesadillas. These little bundles are so filling and quite versatile. Simply fill them with your favorite veggies and only a bit of cheese. This is my adaptation so NOT weight watchers points plus, but still a good low calorie meal.

Vegetable Quesadillas

Ingredients:

Serves (2)

1 tablespoon olive oil
1 small zucchini, cut lengthwise and sliced thin
1/2 red onion thinly sliced
1/2 red, yellow or green pepper, seeded and finely sliced
1/2 jalapeno pepper (optional), seeded and sliced thin
salt
pepper
1/2 tablespoon cumin
2 medium flour tortillas
2 tablespoon chopped cilantro
1/2 cup shredded jack cheese
2 tablespoons low-fat sour cream (optional)


Directions:

Heat oil in a medium saute pan over medium-high heat. Cook vegetables 5-7 minutes until translucent and onion begins to brown.

Season with salt, pepper and cumin. Remove veggies from the pan and set aside.

Back in the saute pan, add one tortilla and cook for 1-2 minutes, then add half veggie mixture, one tablespoon cilantro and half the cheese. Gently fold tortilla over in half then remove from pan. Repeat with second tortilla and serve with sour cream (optional).
