50/52: A few of my Favorite Things






This time of year, before the sun comes up is the best time to be in front of the Christmas Tree with a hot cup of coffee in my favorite Christmas coffee mug. 

Celebrating with friends is the best part of the holidays. Experiencing new holiday events make the season bright!  This past weekend we were treated to a wonderful choir concert with good friends.

Cats under the Christmas tree....they are always fascinated by the lights.

Old Photo Friday:Christmas Eve visit from Santa

Merry Christmas!

Every year that we had Christmas at Hilyard Street at Ralph and Virginia's, Santa Claus would stop by for a visit Christmas Eve. He would bring me a present, take a few photos and then slip into the kitchen for a ham sandwich and a whiskey with Ralph. He'd always come out of the kitchen with mustard from his sandwich dripping off his beard. 

I believe that Santa was an old railroader and did it as a favor for my grandparents.  At any rate, it was the highlight of Christmas eve for me and I am sure for him as well.

Recipe of the Week: Fry Sauce


Okay guys....I am calling it in this week, sorry!  It's the holiday season and I am knee deep in decorating, wrapping, hot buttered rums, and Hallmark Christmas movies.

Ever heard of Fry Sauce?  Good.....I didn't think so.

Fry sauce is also commonly knows as salsa rosada or mayo-ketchup it is similar to Russian dressing.

The Utah-based Artic Circle restaurant chain started carrying fry sauce around 1948.  In Idaho and the Pacific Northwest, fry sauce is also found at such chains as Dairy Queen and Sonic.

I love it and we make a very simple 50/50 mayo ketchup mix at our house, but his is closer to the original Artic Circle recipe.

Fry Sauce


Ingredients:

1 cup mayonnaise
1/4 cup white sugar
1/2 teaspoon salt
1/8 teaspoon paprika
1/4 teaspoon ground mustard
1/2 teaspoon onion powder
1/2 cup ketchup
2 tablespoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce

Directions:

Whisk together mayonnaise, sugar, salt, paprika, mustard and onion powder until smooth.  Stir in ketchup, vinegar and Worcestershire sauce until well blended.

Cover and refrigerate until chilled, about 30 minutes.


* store in an airtight container for up to a month in the refrigerator

49/52: Welcoming Christmas






We've had a whirl wind of activities the past few weeks.....but this year, Christmas arrived the day after Halloween.  

For me, the loss of Sammy pushed me full on into Holiday mode.  I needed the music, the lights, shopping, wrapping and decorating to get me back into the living mode.

Our Rebecca Lane house was decorated the weekend after Thanksgiving and I really enjoyed spending time this past week being surrounded by Christmas again.

This past Saturday, we unleashed the Christmas closet in West Seattle, trimmed the tree and decked the halls.

Brian and I hung our Sammy ornaments with heavy hearts.  His loss is still encompassing, but it's a bit easier to breath when you are surrounded by such an abundance of Christmas joy.

Recipe of the Week: Hash brown Waffles


In case you missed it......you can put just about anything in a waffle iron these days that is not traditional waffle mix.  Have you tried cinnamon rolls in the waffle iron yet!?

I am not typically a sweet food breakfast person, so the idea of a savory mix of anything is extremely appealing.  So get out your waffles iron and experiment a little.  Here is a good base to start with, but the sky is the limit on the ingredients.

Ham and Gruyere Hash Brown Waffles


Ingredients:

5 eggs, divided (only 1 egg beaten)
2 tablespoons olive oil
1 bag (20 oz) refrigerated hash browns (do not use frozen)
1 1/2 cups shredded Gruyere cheese
8 oz thinly sliced black forest ham
salt and pepper, to taste
tablespoon finely chopped chives

Directions:

Preheat waffle iron as directed.

In a large bowl, combine 1 beaten egg, oil, hash browns, cheese and ham.  Season with salt and pepper.

Coat the waffle iron with cooking spray. Use a generous 1 cup of the mixture per waffle and cook until browned and crispy, about 5 minutes.

Top each waffle with one fried egg and then a garnish of chopped chives.


Notes:  It's best to use a traditional waffle iron and not the Belgian style for a crispier waffle

Saying Goodbye

We said goodbye to my Aunt Judy on Saturday night, after her long battle with cancer.  I believe that a higher power wanted her family (Ohio and Oregon) to all be together over the holiday weekend for comfort at the enormity of her loss.  She died peacefully in Ohio surrounded by her husband of 55 years and her three daughters and their families.

She was an amazing woman and I wished that we had lived closer over the years. I would have enjoyed getting to know her more and listening to her stories of our family.

Rest in Peace.





I also learned over the weekend that an old friend of mine from Melbourne, Australia took his life.  I am trying to wrap my head around the fact that he was in such a dark place that no one could help him and he chose to leave this world and escape the pain.

He seemed to always have a smile on his face and a laughed from deep inside his heart.

Rest in peace, Greg.  I will miss you and cherish the memories forever.

48/52: Thanksgiving Eve/Day and Wine Tasting Friday!









We had a wonderful Thanksgiving long weekend!

Amazing family time with great food and drink.  Thanksgiving Eve was spent pre-cooking, drinking wine and listening to a great mix of music that made us all get up and dance!

Our Thanksgiving meal on Thursday was wonderful and we were all grateful to be together and have such a great day of food and rest (despite 2 inches of rain).

Friday we went to 4 amazing wineries in the Washington County/Yamhill area....and they were all places that we've never been to before.  Each place was unique with wonderful food pairings and wine tastings.

47/52: The weekend before Thanksgiving





I am really looking forward to Thanksgiving this year.  Last year, half the family was back east so our house will be full again.  There will be laughter and music and food and fun times.  We need that around these parts.

It's been a quiet November between Brian working on Saturdays and our hearts mending after the loss of Sammy, I've not had the energy.  As I was posting this blog this morning, I realized that I only took one picture from the entire weekend.  Sorry!

Recipe of the Week: Slow Cooker Citrus and Herb Roasted Turkey Breast

Is your gathering a small affair this year?  To be honest, sometimes I wonder if I really NEED to cook a whole turkey.  Anymore, the dark meat is almost non-existent and I find that most people prefer breast meat for leftovers anyway.

This recipe is great for Thanksgiving or anytime you want to cook at turkey breast in your slow cooker.

Citrus and Herb Roasted Turkey Breast


Ingredients:


Cooking Spray
1 (5-7 pound) bone in turkey breast
salt and pepper
1 tablespoon butter, softened
3 tablespoons fresh rosemary, chopped
3 tablespoons fresh sage, chopped
1 tablespoon fresh thyme, chopped
2 oranges, thinly sliced
2 lemons, thinly sliced
1 large yellow onion
1 1/2 cups Riesling wine

Directions:

Spray your slow cooker with cooking spray.

Rinse and pat dry turkey breast.  Sprinkle turkey with salt and pepper.

Stir together the butter and herbs.  Loosen the skin from the turkey without detaching it and spread the butter mixture under the skin.

Place oranges, lemons and onions into the bottom of the slow cooker.

Place the turkey in the slow cooker and pour 1 1/2 cups wine around the turkey.

Place lid on the slow cooker and cook on low for 5-7 hours or until the turkey reaches 165 degrees with an instant-read thermometer.

Remove turkey from slow cooker and tent with foil for 15 minutes.

To brown the skin, place under broiler for 3-5 minutes or until golden brown and then tent with foil.

46/52: Molbak's



Last Saturday was out annual trip to Molbak's in Woodinville.  We go every year (check out 20102012, and 2014) and we come home with a few treasures despite telling ourselves that we have more than enough Christmas decorations!

Since we did not go last year, we were both really excited to see what new displays and items we might find.  We were not disappointed!

Recipe of the Week: Slow Cooker Corn Pudding


Thanksgiving sides can always be a little tricky.  Do you go all out traditional or do you throw in one new dish for your family and friends to try?

If your Thanksgiving is a potluck this year, or if you run out of a side dish during the quest for the epic leftover meal, this is a quick and easy dish to throw together that goes with turkey and all the trimmings, plus you make it in your slow-cooker

Corn Pudding


Ingredients:

Cooking Spray
1/4 cup butter, melted
1 egg
1 cup sour cream
1 package Betty Crocker cornbread mix
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) creamed style corn
1 cup shredded Colby-Monterrey Jack Cheese Blend

Directions:

Spray your slow cooker with cooking spray.

In a large bowl, mix all ingredients together then pour into slow cooker.

Cover; cook on high heat for 2 1/2 to 3 hours or until mixture is set and knife inserted in the center comes out clean.

Let stand for 5 minutes before serving.

45/52: November Skies





It's hard to adjust to the changing seasons....and then when Sammy died, time suddenly became the enemy.  It goes by so fast now...and you want to slow it down most days. Now, I find myself wanting to back it up.....or make it go so fast that I forget the past entirely.  This too, shall pass.

Brian's been working a lot and working on Saturdays.  I never minded when Sammy was alive, in fact.....I actually enjoyed the thought of my little boy and I in the house, puttering, cooking, napping and listening to music while Brian worked.

This past weekend I was alone again on Saturday.  I made the best of it.  I did some things that brought me joy, like watching Christmas movies, coloring in my adult coloring book and making a wonderful dinner for Brian and I after he finished a long day tutoring.  Life is moving on and I am adjusting.

Our skies have been mesmerizing.  I just love November skies when the light begins to fade.  Do you lose track of time in the winter?  I know, I do.  The light fades early in the NW skies and it can catch you off track.  The days get so short this time of year.  Darkness fills a bigger void.

I took time again to enjoy some little things in new light.

Recipe of the Week: Slow Cooker Pumpkin Cobbler


Thanksgiving is three weeks away and this year I am posting Thanksgiving (or Christmas too) recipes that you can make in your slow cooker.  We all want Thanksgiving to go off without a hitch, right? Why not make something that is time saving and easy.

This sounds like the perfect Thanksgiving eve dessert or something a bit different for either Thanksgiving or Christmas.  It's a foolproof way to keep people out of the pumpkin pie!

Slow Cooker Pumpkin Cobbler


Ingredients:


3 eggs
20 oz. can pumpkin puree
12 oz evaporated milk
1 cup sugar
1/4 cup brown sugar
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 tsp vanilla
Butter Pecan Cake Mix
4 tbsp brown sugar
3/4 cup melted butter
chopped walnuts, optional (garnish)
vanilla ice cream, optional

Directions:


Beat the eggs slightly.  Add the puree, evaporated milk, sugar, cinnamon, ginger, salt and vanilla.

Pour the mixture into a greased slow cooker.  Top with the powdered cake mix and spinkle with brown sugar.

Drizzle melted butter evvenly over the top.

Cook on low for 3-4 hours.

Serve garnished with nuts and/or a scoop of vanilla ice cream.

44/52: End of October and other stuff


Who schedules Halloween on a Monday night?

I quickly got home by 4:30PM, started lighting candles, threw candy in our orange bowl, picked out a Halloween outfit (black sweatpants and a Halloween shirt) and started my 8 hour haunted music mix.

There was plenty of wine and a homemade pizza. The first knock on our door was at 6:40 and we turned the pumpkin off and just as I was about to lock the door, the last trick or treeter knocked on the door at 9:03.  We had 54 begars. We've got a bit of candy left!

Since Sammy passed, I've found little to post about and quite a few pictures on my camera that I wanted to share but didn't.  This is the other stuff portion of the post.

A new Rebecca Lane refrigerator.  The old one stopped working and this lovely one is quite beautiful (as fridges go).  We lost the entire contents of the fridge so it gave us the perfect opportunity to toss and restock.





For National Chocolate Cupcake Day, I treated Chick and I to some amazing cupcakes from Market of Choice.  I've been practicing the food photography app on my phone to see if I like it.



A wild storm passed over us in West Seattle (the day Sammy passed away) and left behind a huge branch from our neighbor's cedar tree in the middle of our front lawn.  Luckily it missed the house and we had no other damage.



Finally, I rode the new Seahawk train a few Fridays ago.  The paint job on the locomotive is awesome!  Go Hawks!
