13/52: Let the 50th Celebrations Begin.....










I have an amazing group of friends.  New friends and old friends.  Best of all, friends that know how to throw an amazing dinner party in honor of my 50th year.

Jenny and Brent hosted an elegant dinner party for 9 including a champagne fountain, a 4 course meal and a jazz duo (Jenny provided amazing vocals) the first Saturday in April.

It was an amazing evening and one that I won't soon forget.  Thanks for my friends who are like family for celebrating my birthday!

As we head into the middle of the month, we have completed one full week of mindful eating and we are heading strong into next week with a solid meal plan.  No to low sugar, no to low carbs (rice, potatoes and bread) and no to alcohol.

Menu Plan Monday: Welcome 2019!

Welcome to a new year!

I haven't made a decent meal plan in weeks, but I am super excited to get back to planning.  We've had a busy December filled with rich meals, alcohol, way too much sugar and tons of carbs.

Chick and I have "agreed" to go on a little bit of a cleanse and get some weight off, exercise and sleep better.

Christmas Month (Recipe of the Week): Crock Pot French Onion Soup


Do you have a Christmas Eve meal tradition?  When I was a kid, Christmas Eve was all about the Clam Chowder.  A big steaming bowl of chowdah was a mainstay in our home on Christmas Eve.  I've met other Pacific North Westerners who also enjoy a bowl of soup on Christmas Eve.

Let's face it.  Soup is easy to make and is great for a crowd so if you have an open door policy on Christmas Eve and don't want to spend your entire evening in the kitchen, soup is a great item to have ready to go.

One of my favorite winter soups is French Onion.  It's actually quite easy to make although a bit time consuming.  What if you found a recipe that you can make in the crock pot?  It's also easily adaptable for drop in guests.

Crock Pot French Onion Soup


Ingredients

2 pounds sweet yellow onion, thinly sliced
3 tablespoons butter, melted
2 teaspoons brown sugar
salt and pepper to taste
6 springs fresh thyme
1 bay leaf
6 cups beef stock (veggie stock can also be used)
2 tablespoons dry white wine
1 French baguette, sliced
1 cup shredded Gruyere cheese
1 cup grated Asiago cheese

Directions

Place onions into a 6 quart crock pot.  Stir in butter, brown sugar and salt and pepper.  Top with thyme and bay leaf.  Cover and cook on low heat for 4-6 hours, or until onions are caramelized and browned (stir every hour to 90 minutes, as needed to prevent burning).

Stir in beef stock and wine and season again with salt and pepper.  Cover and cook on high for 2-3 hours.  Remove thyme stems and bay leaf.

When ready to serve; preheat oven to broil.

Place baguette slices on a baking sheet and place in oven and broil until lightly golden brown on both sides, about 1-2 minutes per side.  Set bread aside.

Divide soup into oven proof bowls.  Place on baking sheet and top with baguette slices to cover the surface of the soup; sprinkle with cheeses.  

Place in oven and broil until golden brown and the cheeses have melted (about 3 minutes).

Menu Plan Monday: Middle of the Month of December 2018


Welcome back, Monday!

Time this month is flying by and I am trying to enjoy each day the month of December brings.  The last thing you want to worry about is cooking, grocery shopping, last minute meal plans and spending too much time in the kitchen (unless of course it's by choice).

This month, find recipes that are quick and easy.  Prep ahead on Sunday.  Cut up fruit and veggies for quick snacks.  Hard boil eggs for an easy breakfast.  Make one pot meals so that prep and clean up are easy.  Hearty casseroles are wonderful this time of year and provide abundant left overs.

All these tips will save you time for baking cookies, sipping on hot buttered rums, wrapping presents and after work Christmas shopping.

What's happening in your neck of the woods?  We are trying to enjoy the last few days of summer.  Yes, that's right.  Summer ends next Sunday, September 23rd and just like that.....fall is all around us.

Menu Plan Monday: July 8-12, 2018


Welcome Back to Monday!

Since we've passed the half way point of 2018...it's probably a good time to check your food resolutions (and I don't necessarily mean dieting).  Re-check your pantry supplies, review your menu plan and clean out your fridge and freezer.  Make a plan to eat outside at least one night a week, make a salad for dinner at least one night a week and pack your lunch each night after dinner.
