43/52: The Pumpkin Patch in Snohomish





Last weekend was our annual trek out to Snohomish, Washington to the pumpkin patch with our friends, the Seymours.

We've been coming to the pumpkin patch since before their children were born, and this year their oldest turned 8...so it's an annual tradition that I am quite fond of.

We had a wonderful day and the sun was actually quite warm (unlike last year's rain).

We took home three big pumpkins for the front porch and a few smaller ones for inside. I don't think we will carve a pumpkin this year because we will not be in West Seattle on Halloween.

Sunday we took a walk to Lincoln Park.  I was tired, but the fresh air gave my spirit a lift before flying back to Portland to start the week.

Recipe of the Week: Asian Broccoli Slaw


We hosted a BBQ over Memorial Day weekend and our good friend, Sonja brought an Asian Broccoli Slaw that was super yummy!  She mentioned that she just threw a bunch of ingredients together, but I found her almost exact recipe on the web.

This is a great light summer salad that goes with just about anything and is a wonderful alternative to the traditional pasta and potato salads.

Asian Broccoli Slaw

Ingredients:

2 cups cooked quinoa
2 tablespoons orange juice
2 tablespoons fresh lime juice
1/4 cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
1 teaspoon sesame oil
1/4 cup vegetable oil
salt and pepper
12 oz packaged broccoli slaw
2 cups chopped purple cabbage
2 cups chopped cauliflower
2 cups sliced snow peas
1 bunch green onions
1/2 cup raisins
1/2 cup slivered almonds

Directions:

Cook and cool quinoa!  This will need to be made ahead and stored (up to 2 days) in refrigerator.

In a large jar (with a tight lid), combine the OJ, lime juice, soy sauce, rice wine vinegar, brown sugar, sesame oil, vegetable oil and a pinch of salt and pepper.  Screw the lid on tight and shake until combined; set dressing aside and prepare salad.

In a large bowl, combine the slaw, chopped cabbage, cauliflower, sliced snow peas, green onions, raisins and cooked quinoa.

Pour dressing over the slaw and mix to combine. Top with sliced almonds. Serve immediately or you may keep in the fridge until ready to serve.  If making ahead, top with almonds right before serving.

Notes:  Feel free to omit anything.  Sonja's salad did not include cauliflower or green onions

As Mark Twain once said....

Sonja and I escaped the June gloom and caught a ferry from SFO to Tiburon. I think we were expecting a bit more out of Tiburon, but we found this awesome deck and enjoyed a couple of bloody Mary's. We got burnt like lobsters on the way home!

Old Photo Friday: This is the beginning of a beautiful friendship

The summer of 1999, I started working on Saturdays as a weekend receptionist at a hair salon. I'd been in Portland a couple of years and didn't have many friends. Heather was the full-time weekday receptionist at the hair salon and she invited me to spend the weekend....partying at her grandparents beach house on the Oregon coast. She claimed that there would be tons of people for me to meet and so I totally went out of my comfort zone and drove to the coast on Saturday afternoon with the hand-written directions that Heather had given me.

Turns out.....there was no big party or tons of people......just Heather and her friend Sonja.

11 years later and neither Sonja or I have any idea where Heather is....but our friendship has remained strong.

Old Photo Friday: Newport Seafood and Wine Festival

Date: End of February 2005
Location: Newport, OR
Who: Stacy, Sonja, Renee and Sandra (plus some drunk guy who thought he'd mess up our picture)
What: Since 1978 the Newport Seafood & Wine Festival has attracted visitors from around the world to the central Oregon coast. Each year the festival promises to be packed with all of the fun, food and wine you can handle.
We usually head over on a Friday night and spend most of Saturday at the festival. This was the last festival we attended. The weather was great and we all (including my Uncle Steve) had a great time.
