I absolutely adore peas....honestly I do. I tend to go a bit overboard at a good salad bar, you know the one that has a whole container of peas. My salad typically ends up looking a bit like a pea salad with other stuff. This is a perfect accompaniment to grilled chicken, sirloin patties or steaks and is easy and perfect to make on a hot summer evening.

Pea Salad with Bacon
Ingredients:
4 slices bacon
1 quart water
16 oz frozen peas
1/3 cup chopped green onions (you could also use red onion or sweet yellow onion)
1/2 cup ranch dressing
1/2 cup shredded sharp cheddar cheese

Directions:
Place bacon in a skillet over medium-high heat, and cook until evenly brown, Drain and crumble, then set aside.
Bring water to a bowl in a pot and cook the peas for 2 minutes, until just tender. Drain, then cool peas under cold running water and drain again.
In a bowl, toss together the bacon, peas, green onion, dressing and cheddar cheese. Cover and refrigerate for 30 minutes or until chilled.
