Recipe of the Week: Lamb Meatballs in Curry Sauce


A few weeks ago, Brian and I had date night dinner at our favorite West Seattle Pub.  Instead of ordering my favorite hamburger, I branched out and ordered the lamb meatball curry and boy was is good.  

I've thought a lot about lamb meatballs (lamb in general) for the last few weeks and I really wish Chick and Brian liked it more.  I found several recipes on line and found the one that most resembles what I ordered.  I think these meatballs are irresistible and the curry sauce just makes this dish come together nicely.

Lamb Meatballs in Curry Sauce

Ingredients:

1 pound ground lamb
1/2 cup fresh bread crumbs
1 large egg
1 teaspoon ground cumin
1/2 teaspoon garam masala
1/2 teaspoon kosher salt
Curry Simmer Sauce (this is one of my favorites and just as good as homemade)
Jasmine Rice
4 tablespoons Sour Cream
1/4 cup chopped cilantro
Sliced green onions, garnish

Directions:

Mix the lamb, bread crumbs, egg, cumin, garam masala and salt together in a large bowl. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

Using your hands, shape the meat mixture into 12 large meatballs.  Transfer to a plate. Carefully add the meatballs to the simmer sauce and cover with a lid ajar.  Simmer until the sauce thickened and the meatballs are cooked through with no sign of pink, about 20 minutes.  Season with salt.

Serve meatballs and sauce over hot jasmine rice and top with 1 tablespoon sour cream and cilantro and green onions to garnish.

17/52: Birthday Weekend









Birthdays are meant to be celebrated and I had an amazing long weekend in Seattle!

I arrived early on Friday night and found a beautiful bouquet of flowers waiting for me from my mother.  In all honesty, shouldn't we really celebrate our mothers on our birthdays?

Saturday was a lazy day followed by "date night" and Birthday Eve with Brian enjoying dinner at the 74th Street Alehouse and then a wonderful concert sponsored by the Seattle Folklore Society featuring John Gorka.  If you don't know his music, please check him out. He is a fabulous singer/songwriter and a very funny and entertaining performer.

My birthday was Sunday and it poured buckets of rain, but it didn't dampen my enthusiasm and we had a celebration at Mom and Kenny's followed by dinner at the Tin Room Bar in Burien, which I really enjoyed.  It was a funky little pub with amazing food.

I took Monday off, relaxed with an amazing massage at the Seattle Wellness Center and weeded and re-planted by garden box for summer.  It's hard to believe that the spring bulbs are bloomed and gone and we are planting flowers for the summer ahead and it's not even the end of April.  It was so nice to spend a day off with Brian and get one more day of the birthday weekend for my spirit!

Welcome Monday!

It's hard to see the month of April go.  Spring is my favorite time of year, but I know that Summer is coming soon.

I've got a LONG week in Portland followed by a quick weekend trip to Eugene for a reunion with some friends I have not seen in years.  For me, this week is all about taking good care of myself, exercising and getting good rest.

Old Photo Friday: Happy Birthday, Stacy

I am just days away from my 47th birthday!  Happy Birthday to me!

I am 14 months younger than Molly Ringwald who I idolized in my teen years. This outfit was inspired by her portrayal of Andie Walsh in Pretty in Pink which was released February 28, 1986.

I had on white KED like canvas shoes with white lacy socks over pink tights that had a floral designs all over them.  I wore a cream skirt and a long white button down shirt with a pink canvas fabric vest over the top.  To accent the outfit, I had a pink broach made into a bolo tie.  I thought I was just like Molly Ringwald.....I was Molly Ringwald.  I was Pretty in Pink!

Recipe of the Week: Fettuccine with Pecans and Zucchini


In honor of national pecan day (which was last Thursday), I present to you an easy pasta dish.  I've posted an easy pecan pie recipe before so I was in search of something savory to celebrate the day.  Since I am a huge pasta fan, I think I found a perfect and super easy spring-summer dish.

Fettuccine with Zucchini and Pecans


Ingredients:

3/4 cup coarsely chopped pecans
12 oz. fettuccine
2 tablespoons butter
2 tablespoons olive oil
1 pound zucchini, grated on a large grater (about 3 zucchini) or dice finely
2 garlic cloves, minced
1 cup grated Parmesan cheese
1/2 cup thinly sliced fresh basil
Salt and pepper

Directions:

Heat pecans in a nonstick skillet over medium-low heat, stirring often, 6 to 8 minutes or until toasted and fragrant. Set aside

Prepare fettuccine according to package directions; drain but reserve 1/2 cup of cooking liquid.

Melt butter with olive oil in non-stick skillet over medium heat; add zucchini and garlic; saute for 3 minutes or until zucchini is tender.

Toss in hot cooked fettuccine and add a bit of the reserve liquid to create a bit of a sauce, then add pecans, cheese and basil.  Season with salt and pepper to taste.

Refocus and regroup....over-think and obsess.  It was an ebb and flow weekend.  They happen I guess?!  

I asked Brian, "what happens if I can't be the ying to your yang"?  Then we take a walk along the waters of Puget Sound, we weed the garden beds, we watch our little boy sleep we grill hot dogs.

Old Photo Friday: Stacy and Anna

Me and my beloved dog, Anna named in honor of my parents Anniversary.  I was her baby and she was quite protective of me.  She lived until I was about 10 years old and we finally had to put her to sleep.  She is buried in a silk pillow case in the backyard of my parent's home.

Recipe of the Day: Toasted Cheese


Tuesday was National Grilled Cheese Day, but in my house...they've always been referred to as Toasted Cheese (which is what the Brit's call the sandwich).

Melting cheese on bread is a culinary concept that has been around since the time of Romans, but grilled cheese as we know them didn't become popular until the 1920's.

Here are two amazing non-traditional toasted cheese sandwiches to try next time you get hungry for this classic!

Toasted Brie and Apple Sandwich - Adapted from Weight Watchers


Ingredients:

1/2 medium sweet onion
1/4 cup apple cider/juice
4 slices sourdough bread
1 small Granny Smith apple, thinly sliced
4 oz. brie cheese, sliced into 4 pieces

Directions:

Spray a large nonstick skillet with cooking spray. Place pan over medium-high heat and add onions.  Saute until soft and golden brown, adding cider to prevent onions from burning.

Lay 2 slices of bread on a cutting board and divide apple slices, cheese and onions among them.  Cover with second piece of bread.

Spray skillet again and set over medium heat.  Grill sandwiches until cheese melts and bread browns.  

Cut into halves and serve hot.


Parmesan Crusted Pesto and Tomato Toasted Cheese Sandwich

Ingredients:

4 slices ciabatta or French bread
2 tablespoons soft butter
2 tablespoons basil pesto
4 slices mozzarella cheese
4 slices fresh tomato
1/2 cup finely grated Parmesan cheese

Directions:

Heat a non-stick pan over medium heat.

Butter the outside of two slices of bread and place in pan.  Spread pesto on the inside of each slice of bread in the pan.  Place mozzarella cheese slices on top of on piece of the bread.  Add tomato then top with the other slice of bread.  Sprinkle half of the Parmesan cheese on the outside of only one side of the sandwich.

Grill each for 2 minutes or until crusted and golden brown.  Flip the sandwich, and cook the other side for about 2 more minutes.

Cut into halves and serve hot, Parmesan cheese side up.

15/52: April in the Arboretum








It's not yet the middle of April and it's already been an amazing Birthday Month!  Our weather has been the star of the show with last week's temps in the upper 70's low 80's!

Friday night was date night at Elliott Bay and I branched out and ordered their lamb meatball curry which was fabulous.  We left the restaurant just in time to make it up to Solstice Park minutes after sunset and the sky put on quite a show.

Saturday's adventure was a car-free day up to the Seattle Arboretum...a place that we have never explored together.

Founded in 1934, the Arboretum has over 230 acres on the shores of Lake Washington.  It contains one of the most diverse and important plant collections in North America displayed in acres of woodlands, wetlands, gardens and walking trails.  The arboretum is internationally renowned for its collection of oaks, conifers, camellias, hollies and Japanese maples.

The park is accessible year round, but Azalea Way, the main road through he park is particularly inviting in springtime.  Originally a road for the mill, Azalea Way is now a path, lined with enormous flowering bushes that explode in a sea of color as warm weather hits Seattle.  At 3 miles round trip, the walk was a great way to get our exercise.

Spring has finally sprung here in Oregon and our days are getting warmer and our evening are getting longer.  We are back walking and trying to get fit for Summer.  Since we typcially go for a walk before dinner, it's super important to have a good menu plan in place, have meals that are easy to prep and quick to cook.

Paula Fuga and Makana at the Alberta Rose Theater










After over 20 years of being closed to the public, the Alberta Rose Theater in the Alberta District of Portland has re-emerged as Portland's premier setting to hear acoustic music, art house films and live performances.

Opened in 1927 as a motion picture house, it showed movies until 1978 then closed. In 2010, Joe Cawley turned the 1920's movie house into a unique and intimate concert venue.  The theater has 300 fixed seats, a mid-sized listening room where every seat feels close to the stage and the artists performing.

Last Wednesday, Chick and I saw Paula Fuga and Makana perform at the Alberta Rose and it was an amazing evening! 

Praised for her spellbinding vocals and ability to stir the deepest emotions with her soulful melodies, Paula has established herself as one of Hawaii's most sough after live performers.  Her music featured soul and jazz-infused lyrics, and seamlessly mixed English and Hawaiian languages, supported by the traditional Hawaiian instrument, Ukulele. 

After Paula performed an hour set, we were treated the the talents of Makana, an internationally acclaimed slack key guitarist, singer, composer and activist. He is recognized as one of the top guitarists in the U.S. by Guitar Player Magazine and was honored by his peers in Hawaii with the Ki Ho'alu Foundation (Slack Key) Legacy Award.  His songs ranged from traditional to highly original, both instrumental and lyrical.

Before the show we had cocktails and appetizers at the Whiskey Branch Bar located next door to the theater.

Recipe of the Week: Bacon Asparagus Strata


You know spring is here when you start to see fresh asparagus in your local markets in abundance!.  What I like about this recipe is that you can serve it for breakfast or brunch or even for dinner with a salad. This dish can also be prepared 24 hours in advance so your mealtime prep is a breeze.

Bacon Asparagus Strata


Ingredients:

Cooking spray
8 strips of bacon
1 bunch of fresh asparagus, cut into 1 inch pieces (discard tough ends)
1 red bell pepper, chopped
1 yellow onion, chopped
12 slices dry French bread, cut into 1/2 inch cubes (about 8 cups)
2 cups shredded Swiss cheese (12 ounces)
8 eggs
3 cups milk
3 tablespoons Dijon mustard
Salt and pepper

Directions:

Lightly coat a 3 quart rectangular baking dish with cooking spray; set aside. 

In a large frying pan, cook bacon until crisp and reserve 1 tablespoon of bacon grease in the same pan.  Add the asparagus, red pepper and onion to the pan and cook over medium heat until vegetables begin to brown and soften, about 5-7 minutes.

In a medium bowl, combine the cooked bacon and vegetables and mix together. Cool for 5 minutes.

Place half the bread cubes in the prepared baking dish.  Top with half the bacon/vegetable mixture and half of the cheese.  Repeat layers with remaining bread cubes, bacon/vegetable mixture and cheese.

In a large bowl, beat eggs with a whisk, then add milk, mustard and salt and pepper and whisk together.

Carefully pour egg mixture over the bread cubes in dish.  Using the back of a spoon, gently press down on the layers to moisten all of the bread.  Cover dish with plastic wrap and chill for 2 hours (or up to 24).

Preheat oven to 325F.  Bake uncovered for 50-60 minutes or until puffy and golden brown. Let stand for 10 minutes before serving.

14/52: Final 4 Weekend







April has arrived and so has some amazing spring weather.  We had a week of sunshine, no rain and warmer temperatures to welcome a new month!  I rode the Coast Starlight on Friday night to Seattle and arrived as the sun was setting.  The scenery has improved from the dark nights of winter.  This is my favorite time of year to ride the train.

Brian spent some time in the back yard on Saturday under blue skies.  My front garden bed continues to produce amazing colors.  Last fall I planted yellow, purple and fushia colored tulips and they are all coming up among a sea of yellow daffodils.  I so love spring!

Saturday was the Final 4 and I requested Brian's famous Deer Park Nachos.  He made a huge plate for each of us.  Spectacular!  Sunday morning he made cowboy hash.  I am a spoiled woman!

We walked 6 miles over the weekend through Lincoln Park both Saturday and Sunday (3 miles each day).  We are behind last years pace, but with the continued spring weather we are slowly getting back on track!

Old Photo Friday: Baby Stacy
