Recipe of the Week: Keke Vai with Banana (Banana Pancakes)




Perhaps it was the Jack Johnson song, but doesn't the idea of making banana pancakes on a rainy Sunday morning sound divine?  How about cooking up some banana pancakes in Maui (which is exactly what I am going to be doing in a few days).

Keke Vai is Tongan for banana pancakes.  This recipe is slightly different from the Bisquick pancakes you are probably used to making, but it still looks divine.

Keke Vai with Banana (Banana Pancakes)

Ingredients:

3-4 cups flour
3-4 tsp baking powder (per cup of flour used)
1 1/2 cups white sugar
3 cups water (or less); add 1/2 cup at a time
2-3 very rip smashed bananas
1/4 cup vegetable oil
coconut pancake syrup


Directions:

Mix dry ingredients thoroughly, then add water and stir until well combined.  Batter should be on the thick side.

Stir in the smashed bananas.

Heat 1/4 cup oil in a saute pan on medium high heat.  After pan is heated, scoop keke mixture and carefully pour into the pan.

Fry keke in oil and flip (carefully) away from you as to not splatter grease all over you!

Drain on a paper towel.

Best served warm with coconut pancake syrup.


Oh....let's crank up some JACK!!

Walking, biking or a combination of both every weekend this summer through Lincoln Park!  Last weekend's Saturday walk was 3.59 miles!

Recipe of the Week: Hawaiian-Style Garlic Shrimp


The countdown to Maui is on......

This year, we are stopping over in Oahu to visit Brian's brother Kerry and his wife Julie.

If we had more time, I'd love to explore the North Shore and check out the food carts.  You know food carts here in Portland are insanely popular, our city has put food carts on the map and you know what.....so has Oahu.

I found this recipe, based on a recipe from a food cart on Oahu called Giovanni's.  Nothing tastes like shrimp in Hawaii, but this recipe looks unique an easy to prepare.

Hawaiian Style Garlic Shrimp

Ingredients:

1 pound large shrimp, shell on, de-veined
3/4 cup clarified butter
1 head garlic, peeled and chopped
3/4 cup flour
2 tablespoons paprika
1/2 teaspoon cayenne
1/4 cup dry white wine
1-2 teaspoons Hawaiian sea salt
1 lemon, cut into wedges


Directions:

De-vein shrimp.  Combine flour, paprika and cayenne in a dish.  Toss the shrimp in the flour mix to coat.  

Heat a large skillet with over medium heat and add the clarified butter and garlic.  Cook for 1-3 minutes then add the shrimp in a single layer.  Cook for 3-4 minutes on one side, then turn and cook for another 3-4 minutes.  

Add the white wine and salt.  Cook for 1-2 minutes.  Squeeze a bit of lemon over the shrimp.  Serve with a slice of lemon, side of rice and some steamed veggies.

34/52: Huey Lewis & The News at the Zoo


2013 marked the 30th anniversary of one of the most celebrated album of the 1980's.  Peaking at #1 and selling over 10 million copies worldwide, "Sports" by Huey Lewis and the News was an anthem of the 80's decade.

Over half of the albums songs (The Heart of Rock and Roll, Heart and Soul, I Want a New Drug, If This Is It) were huge hit singles along with the memorable music videos.


In 2013, Huey Lewis and The News commemorated the milestone with their "Sports" 30th Anniversary World Tour and they decided to keep the party going with tour dates throughout 2014 (the band plays about 80 shows a year).


Last Wednesday night they played the Oregon Zoo in Portland to a sold out crowd (for the second year in a row).

They opened with "Heart of Rock and Roll" and keep the crowd on their feet for most of the show, including old R and B standards including a really cool acapella set.



The zoo is always a great place to see a show.  Chick and I packed a picnic lunch, bought a bottle of wine and people watched!  It was a perfect summer evening in Portland.


Huey and the band played all their hits for nearly 90 minutes.  They sounded just like they did over 30 years ago!  Keep it going Huey!

Recipe of the Week: Hawaiian Meat Jun


I saw one of my favorite chef's, Sam the Cooking Guy prepare Meat Jun while filming his cooking show in Kauai.  To be honest, I'd never heard of Meat Jun before, but as he was making it, I realized that it is nothing more than what my father fixed me growing up as a kid...only in my house, we called them finger steaks.

Meat jun is a Korean dish consisting of thin slices of beef, dipped in egg batter and fried.  A type of Jeon, it is a popular dish served at Korean restaurants in Hawaii.  Typically it is served with a dipping sauce of soy.  Growing up, I dipped my finger steaks in ketchup.  You be the judge.

Hawaiian Meat Jun
Ingredients:

2-3 lbs chuck roast
1 cup shoyu
1/4 cup sesame seed oil
4-5 stalks green onions, chopped
4-5 garlic cloves, minced
4 eggs, beaten
flour
oil for frying

Directions:

Cut meat into this slices.  Place in a bowl and add the shoyu, oil onions and garlic.  Mix well and let marinate for 30 minutes (or up to 24 hours).  

Pour flour into a flat pan.  Dip marinated meat pieces in flour.  Transfer meat into the beaten eggs.  Drip off excess.  Fry until golden brown.  Drain on paper towels.

33.75/52: Baseball


Week 33 of the year was full of baseball!

Last Thursday, Chick and I went to our first Hillsboro Hops game of 2014.  It's hard to believe that this short season A league is starting to wrap up their season.

The stadium is a fantastic place to watch minor league baseball.  Small, intimate....and there isn't a bad seat in the house!

Who doesn't love a beer and a hot dog on a warm summer evening?

Last Saturday night Brian and I went to our first Seattle Mariner's game of 2014 and my first game since summer 2012.


It was a special night, the induction of Mariner coaching legend, Lou Pinella, plus it was Lou Pinella bobblehead night!!

"Sweet Lou"  managed the Mariner's from 1993-2002.  He was Manager of The Year in 1995 and again in 2001 when he led the Mariners to a record tying 116 wins.


Pinella is the only manager in Mariners history to have a winning record.  Following the 2002 season, he left the Mariners to coach the Tampa Bay Devil Rays.


He remains to this day, a legend and much loved part of Seattle sports history.


The induction ceremony featured many of the players who Pinella coached while in Seattle, including Jay Buhner, Edgar Martinez and Dan Wilson.

It was full of old stories, poignant memories, laughs and tears.

Thanks to my second Dad, Kenny for the gift card (birthday) that made it possible for us to get awesome seats in the Terrace Club.

We had a great evening!

Summer continues to blaze forth with another short, beginning of the week visit from my sweetheart.  Sunday is a bit of a yard work party....trimming and raking and weeding (ugh).  Monday and Tuesday are strictly Weight Watchers and we are saving up all our points for the summer concert of the year at the zoo on Wednesday

Recipe of the Week: Hawaiian Macaroni Salad

 

It's that time of year again.....MAUI TIME!  Just three weeks away.  It's time to start thinking of some Hawaiian favorites.

One of my favorite meals in Hawaii is the traditional plate lunch.  A Hawaiian plate lunch typically consists of meat (BBQ chicken, kalua pork or loco moco), two scoops of sticky rice and a big scoop of macaroni salad.  Trust me, if made the right way....it in no way resembles traditional mainland macaroni salad.  It's an acquired taste, especially those who love the American staple, but it's fantastic.

There are many places that claim to have the best recipe and scores of different varieties on blogs...I've even tried several places in the Portland area.  This recipe is fairly spot on to the traditional Hawaiian delicacy that I've had in Maui.

Hawaiian Macaroni Salad

Ingredients:

1 pound elbow macaroni
1/2 cup apple cider vinegar
2 cups whole or 2% milk, divided
2 cups Best Foods mayonnaise, divided
1 tablespoon brown sugar
4 green onions, thinly sliced
1 large carrot grated
1 celery stalk, minced
salt and pepper


Directions:

Bring 4 quarts water to boil.  Add 1 tablespoon salt and the macaroni.  Cook until very very soft, about 15 minutes.  Drain and return to the pot; add vinegar and toss until absorbed.  Let it cool for about 10 minutes.

Whisk together 1 1/2 cups milk, 1 cup mayonnaise, brown sugar and 1/2 teaspoon salt and 2 teaspoons pepper.

Once the pasta has cooled, whisk in the dressing.  Let cool completely.

Add the remaining 1/2 cup milk and 1 cup mayonnaise, along with the green onions, carrot and celery.  Stir to combine, then season with salt and pepper.  Chill at least 1 hour before serving.

33.5/52: Lake Morton and Mom's Birthday Brunch




We spent last Friday night at Lake Morton, WA with our good friends, Jenny and Brent and family.  Their lake house is a special place and we always love the invitations for dinner, brunch and family gatherings.  After dinner, we spent time relaxing on the deck down on the lake and watched the sun set.

On Saturday, we hosted brunch for my Mom in celebration of her birthday this next week.


Brian made his special quiches and a fruit salad and we bought these ginormous cinnamon rolls.  There were mimosas and presents and everyone had a nice morning!


Happy Birthday, Mom!


Saturday night after a day of on and off thunder storms and a bit or rain, we were treated to the most amazing sunset of the summer.  Simply peaceful.

33/52: Greenway Concert


Chick and I went to the annual Greenway Concert in the Park last Thursday night.  It was a warm evening and a beautiful setting for some local bluegrass music.


The Greenway "greenbelt" is one of the many little hidden jewels in our town of Beaverton.  Chick and I have walked the greenbelt for years.  They put in a disc golf course a few years ago and the Tualatin Valley Park and Recreation Center hosts a concert/community event summer.


This year's concert was by The Blackberry Bushes, a Seattle based Alternative-Folk-String band.  They have an innovative acoustic sound which draws from the deep roots of American traditional music to create a rich patchwork that threads with artists like Gillian Welch, Sean Hayes and Crooked Still. 


They really entertained the crowd and it was an enjoyable evening in the park.

Happy Birthday to my second Mom, Rosemary who celebrated her birthday on 7/21/14.

I believe this picture was taken on or around my birthday when I was living on Capitol Hill in Seattle, working at Red Robin and going to school at Seattle Central Community College.  Pop and Rosemary came up for a visit around my birthday and we did touristy things around the city and then went out to a fancy dinner for my 19th or 20th birthday.
