With the Christmas season upon us, I've decided this month's Recipe of the Week theme is all about the Christmas Cocktail....how to make them, serve them or get them!
This week, one of my all time favorites - The Hot Buttered Rum.
Every year, Chick and I try out about 3 or 4 mixes and last year we just never found the right combination of spices.
This year I found this really easy mix - which you could easily prepare and give as a gift to friends, co-worker's or family.
2 sticks (8 ounces) unsalted butter, softened to room temperature and cut into pieces
1-1/3 cups (packed) brown sugar
1 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
Tiny pinch of ground cloves
1 cup honey
The batter may be made ahead and refrigerated for several days.
For Each Serving:
1 to 1-1/4 ounces rum
Prepare the batter: In a large bowl, cream the butter with the brown sugar, nutmeg, cinnamon, cloves and honey. Continue to beat until the mixture is completely blended and somewhat fluffy. (The batter will keep several days if refrigerated, but allow it to return to room temperature before using.)
For each serving:
Fill a coffee mug ¾ of the way with boiling water. Pour in the rum and top with a large spoonful of the "batter". Briskly stir and serve.
Yield: 12 servings
